The different uniforms denoted each member of staff's job. Management wore black alpaca jackets (grey in summer), white oversleeves and aprons; counterhands wore white tunics and aprons (black buttons for 'juniors', red for qualified salesmen). Cooked meats salesmen wore chef's hats. The girls seated at the front were 'grocery girls', who worked on the counters selling packed goods like tea, sugar, canned goods, biscuits etc, while the girls in dark dresses were clerical staff. The men wearing dark overalls and aprons were the warehouse staff and porters. Missing from the picture are the delivery staff, who wore peaked caps, dark coats and gaiters.
